One of nature’s most popular ‘fast food’ with so many varieties of its fruit it seems impossible that there isn’t one that would suit everyone’s tastebuds. They are take anywhere and don’t need to be stored in the fridge which makes them ideal to have on hand when on the go and help to make you feel fuller.

Vitamin C is their star benefit and they also have vitamin A, magnesium and are a good source of dietary fibre. They have been used for reducing heartburn, are considered great in the aide of weight loss especially belly fat and have greater antioxidant benefits than half a punnet of strawberries. Eat them as they are including the core if you like, juice them, as unsweetened applesauce they make excellent egg substitutes in baking, stew them then add them to pies and strudels; slice/grate them into salads, add them to soups as a thickener or even bake/poach them whole to incorporate into delicious desserts.

Recipe Waldorf Salad (from simplyrecipes)

Ingredients

  • 1/2 cup chopped, slightly toasted walnuts
  • 1/2 cup celery, thinly sliced
  • 1/2 cup red seedless grapes, sliced (or a 1/4 cup of sultanas)
  • 1 sweet apple, cored and chopped
  • 3 Tbsp egg free mayonnaise
  • 1 Tbsp fresh lemon juice
  • Salt
  • Pepper
  • Lettuce

Method

  1. In a medium sized bowl, whisk together the mayonnaise (or yogurt) and the lemon juice.
  2. Add 1/2 teaspoon of salt, 1/4 teaspoon of fresh ground pepper.
  3. Mix in the apple, celery, grapes, and walnuts.
  4. Serve on a bed of fresh lettuce.
