is one of those vegetables that I want to love but don’t know how to prepare and use properly so I am using this post as a tool to learn about them and then make something over the next week with the help of suggestions from A Vegan Smiles followers 🙂

Fennel is composed of a white or pale green bulb. The stalks are topped with feathery green leaves near which flowers grow and produce fennel seeds. The bulb, stalk, leaves and seeds are all edible. Fennel is related to parsley, carrots, dill and coriander.

They have lots of vitamin C, some vitamin A, vitamin B3, magnesium, calcium, protein, iron and folate so they are fabulously good for you. The health benefits of fennel include relief from anemia, indigestion, flatulence, constipation, colic, diarrhea, respiratory disorders, heart disease, menstrual disorders, and its benefits regarding eye care. Once you take the outer leaves off them they can be eaten raw or cooked by roasting, sautéing, braising or stewing.
