Onion

so many different varieties of onions and many colours too, my favourite has long been red onion used raw in salads.
Onions contain vitamin C, vitamin B6, magnesium, protein, calcium and iron, they are great for counteracting cholesterol and ridding the body of free radicals.
The whole of the plant including the green top which has vitamin A within it can be used.
Most popularly fried in oil, onions can be used either cooked or raw, as a side or a component of a dish; including casseroles and salads, not forgetting they play a major role in most chutney and sauces also they are very easy to get all year round.
This recipe is super easy and great for using as a side to pretty much anything 

Recipe Red Onion & Tomato Jam

Ingredients
• 1 tablespoon olive oil
• 1 large onion, peeled and finely diced; peeled and finely diced
• 1/3 cup Tomato Paste
• 1/4 cup water
• 1/4 cup brown sugar
• 1 tablespoon white wine vinegar
Preparation
1. Heat olive oil in a medium saucepan.
2. Add red onion and cook on a medium heat for 5-6 minutes stirring frequently.
3. Add Tomato Paste and cook for 1 minute, stirring continually.
4. Stir in water, brown sugar and white wine vinegar
5. Heat until boiling, reduce heat to medium low and cook for 2-3 minutes, stirring frequently
6. Serve warm or chilled
