Spring has sprung, I am so excited that we will be having in season delicious fruits back on the menu. Pineapples are so lovely and juicy and will be in abundance during this season.

Pineapple is an excellent source of vitamin C and manganese. It is also a very good source of copper and vitamin B1, vitamin B6, dietary fibre, folate, and pantothenic acid. They are low in calories and have no fat or cholesterol.

They can be eaten as is raw, added to salad or smoothies, put into casseroles, fried and in burgers and many other limitless possibilities.

Also the top of the fruit can be put into the ground after it has been cut off to start a new plant.

Recipe: Pineapple and mint frappe

Ingredients

  • 1 pineapple, peeled, chopped
  • 1/4 cup mint leaves
  • 12 ice cubes
  • mint sprigs, to serve

Method

  1. Place pineapple, mint and ice in a blender. Blend until smooth. Pour into glasses. Top with mint sprigs.
  2. Serve.
